Cooking for one: Fried egg sandwich with sauteed greens

I’ve recently taken to sauteing greens I would normally eat raw — primarily spinach and mixed salad greens. It doesn’t take much more work than tossing them onto a plate for a salad (especially when they come nicely packaged and pre-washed), but sauteed greens are much more satisfying, especially in the middle of winter. And especially with plenty of garlic.
