Snapshot: braising/stewing finale

Chef B. is pretty awesome. Despite all our ineptitude, she continued to push us full steam ahead, both relentlessly stern and encouraging, a leader by voice and by example. We wrapped up the segment with a melting pot menu to bring it all home. Thanks to this class, I’m a bit of an expert on beef stews (I must have cooked at least 4 in the past week, including Hungarian goulash on the last day), so don’t be surprised if that hearty SOB is what I bang out the next time I cook for you :). I promise it will be good.
